We made our new process in the concept that we want to explore about the flavor of acid in coffee, then we found malolactic process when we drink wines, it gave me a taste like fruit&yogurt by some lactic acidity
The way to make it they have some kind of starter that on the ferment they doesn’t end like vinegar from yeast but our new process try to transform the malic acid in coffee ferment transform to the lactic acid like happen on milk to yogurt, just this time we try to make this in coffee cherries :) to make good coffee that we love to drink.
